These aren't usually things you find in a single bite, but at SUR Chocolates, we love a challenge. That's why we're thrilled to introduce our latest creation: the Paloma Alfajor.

Inspired by the iconic Mexican cocktail, this isn't just a dessert; it's a story of craftsmanship, provenance, and celebrating the magic that happens when you bring together exceptional ingredients.

The Original Paloma: A Legacy of Freshness

The Paloma, which means "dove" in Spanish, is arguably Mexico's most popular cocktail, even surpassing the classic margarita in its heartland. It’s a beautifully simple drink: tequila, grapefruit soda (often Squirt or Jarritos), and a squeeze of fresh lime, usually served in a salt-rimmed glass.

Its beauty lies in its balance. The earthy, agave notes of the tequila are perfectly countered by the tart-sweet burst of grapefruit and the effervescence of the soda. It's a drink that evokes lazy afternoons, vibrant mercados, and a spirit of joyful celebration.

Reimagining a Classic for Jose Cuervo

When we were invited to create a special treat for a Jose Cuervo event, we knew we had to honour the tequila giant's heritage. The Paloma felt like the natural inspiration—a classic, beloved, and perfectly paired with their exceptional spirits.

But a SUR Chocolates alfajor isn't just about flavour; it's about the journey of each ingredient. We don't just use grapefruit flavour; we source real grapefruits in our ganache. The aroma that fills our kitchen during this process is pure sunshine!

For the tequila, only the best would do. We infused our ganache with Jose Cuervo Tradicional Reposado, a tequila known for its smooth, slightly oaky character that comes from aging in oak barrels. This adds a layer of depth and sophistication, ensuring the cocktail’s spirit truly shines through without overpowering the delicate balance of the alfajor.

A Pinch of Story in Every Bite

We believe that every ingredient should have a story. That's why the salt we use isn't just generic table salt. It's hand-harvested sea salt from Colima, Mexico. This particular salt, with its clean taste and natural minerals, provides the perfect salty counterpoint to the sweet and tart, just like the rim of a Paloma glass. It’s a small detail, but one that roots our alfajor in its cultural heritage.

All of this zesty, spirited goodness is then enveloped in two of our signature delicate cookies and enrobed in a layer of velvety white chocolate. The creamy sweetness of the white chocolate provides the perfect canvas, allowing the bold flavours of the grapefruit and tequila to unfold beautifully.
