How to Store Chocolate and Alfajores

1. Ideal Temperature and Humidity

Chocolate thrives in a cool, dry environment. Aim to store it at temperatures between 15°C and 18°C (59°F to 64°F) with humidity levels below 55%. Excessive heat can cause chocolate to melt or develop fat bloom—a whitish coating resulting from cocoa butter rising to the surface

2. Avoid Refrigeration

While it might seem logical to refrigerate chocolate, doing so can introduce moisture, leading to sugar bloom—a grainy, white appearance caused by sugar crystals on the surface. If refrigeration is necessary due to high ambient temperatures, wrap the chocolate tightly in cling film and place it in an airtight container to protect it from moisture and odours.

3. Protect from Light and Odours

Store chocolate away from direct sunlight and strong odors. Light can degrade chocolate, while its fat content allows it to absorb surrounding smells, potentially altering its flavour.

Alfajores, with their delicate cookies and creamy fillings, require careful storage to preserve their texture and taste.

1. Cool, Dry Environment

Like chocolate, alfajores should be stored in a cool, dry place, away from direct sunlight and heat sources. This helps maintain the integrity of the cookies and prevents the filling from becoming too soft or runny.

2. Airtight Containers

Place alfajores in airtight containers to protect them from moisture and external odors. This is especially important if they are filled with dulce de leche or coated in chocolate, as these components can absorb surrounding smells and moisture, affecting their flavour and texture.

3. Refrigeration (If Necessary)

If your environment is particularly warm or humid, you may refrigerate alfajores to extend their shelf life. Ensure they are well-wrapped and placed in an airtight container to prevent them from drying out or absorbing odors. Before consuming, allow them to return to room temperature to enjoy their optimal texture and flavour.

Freezing Chocolate and Alfajores

Freezing can be an option for long-term storage, but it requires careful handling:

Chocolate: Wrap tightly in cling film and place in an airtight container. Before freezing, refrigerate for 24 hours to minimize temperature shock. When ready to use, reverse the process—move from freezer to fridge for 24 hours, then to room temperature before unwrapping.

Alfajores: Wrap individually and store in an airtight container. Thaw in the refrigerator overnight, then bring to room temperature before serving to maintain their texture and flavour.
